While Roostar’s fast-casual concept of custom bahn-mi sandwiches appeals to a diverse fast-casual crowd, the brand is best-suited for a young, vibrant environment with customers looking for more than your average ham sandwich combo. Roostar’s commitment to fresh, quality ingredients and above-average service means its guests have a more discerning palette and are not strictly value shoppers.
Other considerations included the opportunity to expand the catering business, offering patio seating, and finding a central location to streamline operations with the other two restaurants. Overall cost, specifically a generous TI allowance, was a key factor due to the expense of building out a first-generation restaurant space.
